Job Details

Oversee the day-to-day operations of the food hall, ensuring a well-organised, efficient, safe and consistently high-quality environment for guests, vendors and staff. The role will act as the key operational link between food hall management and individual food & beverage operators, coordinating daily activities, resolving operational issues, maintaining standards and ensuring compliance with company policies, health and safety requirements and agreed vendor obligations.

The ideal candidate will be a highly hands-on, proactive and organised operator with strong experience in food halls, food courts, hotels or multi-outlet restaurant environments, and the ability to manage multiple vendors and operational requirements simultaneously.

Key Responsibilities -

• Oversee the day-to-day operations of the food hall, ensuring the venue is clean, organised, safe, well-maintained and operating efficiently at all times.
• Act as the primary operational point of contact between management and food & beverage vendors, ensuring smooth communication, coordination and follow-up.
• Monitor vendor operations and ensure compliance with agreed operating standards, food safety requirements, hygiene standards, opening hours and food hall policies.
• Conduct regular operational checks and site inspections, identifying issues and ensuring they are addressed promptly.
• Coordinate with vendors on deliveries, loading/unloading, waste management, pest control, grease traps, utilities, maintenance and other shared facilities.
• Monitor the overall guest experience, including service standards, cleanliness, ambience, seating areas and common areas, and address issues promptly.
• Liaise with maintenance, cleaning, security, pest control and other service providers to ensure the food hall remains fully operational and presentable.
• Support the onboarding, opening and ongoing operational requirements of new vendors, ensuring they are properly prepared and compliant before commencing operations.
• Monitor vendor performance against agreed operational and commercial requirements, escalating recurring issues or non-compliance to management.
• Coordinate operational schedules, events, promotions and special activities within the food hall to minimise disruption and maximise guest engagement.
• Maintain accurate operational records, inspection reports, incident reports, vendor communications and follow-up actions.
• Respond to and resolve day-to-day operational issues, vendor concerns and guest complaints, escalating matters where appropriate.
• Work closely with management to identify operational improvements, cost efficiencies and opportunities to improve the overall performance of the food hall.
• Ensure compliance with all applicable UAE/Dubai regulatory, health, safety and food hygiene requirements relevant to the food hall and its operations.
• Be hands-on and visible on the floor, actively monitoring operations rather than relying solely on reports or vendor feedback.
• Support management with operational reporting, budgeting, forecasting and performance reviews as required.
• Carry out any other duties reasonably required to ensure the smooth, efficient and successful operation of the food hall.
